Juggling being a mom and owning a business isn’t always sunshine and rainbows. While I constantly preach that business owners need to automate their approach, I think it is time mamas do the same. If anyone knows a robot that wants to cook me 3 meals + 1 snack a day that would be ideal but until that happens here is some meal time inspiration for your upcoming week!
Monday
Breakfast: Avocado toast + eggs
Lunch: BBQ chicken bowls (bbq chicken, brown rice, coleslaw)
Dinner: Trader Joes cauliflower gnocchi + breaded chicken bites
Snack: Parfaits (yogurt, granola, frozen berries, chocolate chips)
Tuesday
Breakfast: Peanut butter + banana smoothie
Lunch: Turkey sandwich (Dave’s Killer 21 Whole Grain Bread, sliced turkey, mayo, a slice of cheese, romaine lettuce)
Dinner: Taco salad (ground turkey + taco seasoning, sliced bell peppers, guacamole, sweet potato tortilla chips, lettuce, shredded cheese, pinto beans, sour cream, salsa)
Snack: Carrots + hummus
Wednesday
Breakfast: Breakfast burritos (whole wheat wrap, scrambled eggs, diced avocado, spinach, salsa)
Lunch: Asian bowl (ground turkey, brown rice, baby corn, broccoli, shredded carrots, chili sesame oil, teriyaki sauce)
Dinner: Impossible nuggets and sweet potato fries with homemade sauce (sauce is mayo, mustard, lemon juice, paprika, relish. No measurements!)
Snack: Cottage cheese with fruit
Thursday
Breakfast: Nut butter oatmeal
Lunch: Egg salad rice cakes
Dinner: Steak fajitas
Snack: Kodiak bites + almond butter
Friday
Breakfast: Steak + egg bowl (diced steak, tomatoes with chili peppers, eggs, diced avocado, onion)
Lunch: Salad of choice
Dinner: Sloppy Joe Casserole (ground turkey sloppy joe, corn bread. Cook sloppy joe, put into oven safe dish, top with corn bread mixture and bake)
Snack: Mini cucumber sandwiches
Saturday
Breakfast: Waffles
Lunch: Greek ground chicken bowls
Dinner: Out!
Snack: Cheese board + fruit
Superbowl Sunday
Breakfast: Baked apple oatmeal
Lunch: Turkey cranberry wrap
Dinner: Sweet potato nachos, cottage cheese spinach dip, apple slice cookies (sweet potato nachos: sweet potato tortilla chips, ground turkey, queso or sprinkled cheese and bake in the oven until melty. Add diced avocado, diced red onion, salsa, sour cream, finely chopped lettuce and enjoy!) (cottage cheese dip: microwave cottage cheese, garlic, and frozen chopped spinach until melty and delicious. Enjoy with carrot chips or chips of your choice!) (Apple chips: Thin sliced apples, nut butter, toppings of choice – I add chocolate chips and granola but anything works!)
Snack: Protein bar
